Hand-Stretched Udon Noodles

This smooth, hand-stretched udon has been passed down for generations in the Goto Islands of Nagasaki Prefecture.
The noodles are carefully stretched and twisted thin while being coated with camellia oil, giving them a silky texture and a distinctive, firm bite.
Enjoy them chilled, or served hot straight from the pot.

Distinctive texture

Delicately stretched for a smooth, springy bite

Unlike cut noodles, our hand-stretched udon is finely rounded, creating a unique texture. The twisting process during stretching gives each strand a soft yet resilient chew.
Traditional crafting process

Patience shapes flavor and texture.

The dough is repeatedly rested and stretched, carefully extended to remarkable lengths before being air-dried for a full day. This slow process ensures even texture and lasting quality.
