Instructions

Step 1

Remove the strings from the celery using a peeler, cut into 2 inch (about 5 cm) lengths, then slice thinly lengthwise. Peel the grapefruit and remove the segments.

Step 2

Soak the celery in water to crisp it, then drain well.

Step 3

Combine the celery and grapefruit in a bowl, add the vinegar, and toss to combine.

Tip

Since the mixture can become watery over time, combine with the vinegar just before serving.
