Step 1
Finely chop the okra.
Step 2
Peel and finely chop the nagaimo, then combine it with the okra and lightly mash the mixture with a knife.
Step 3
Combine [A] in a saucepan and bring to a boil. Reduce to medium heat and simmer for 2–3 minutes, then stir in [B].
Step 4
Add the mixture from Step 2 to the saucepan and cook over low heat for about 3 minutes, until the broth becomes slightly silky.
Step 5
Cook the udon noodles according to the package directions. Rinse under cold water and drain well. Serve with the broth from Step 4 and grated ginger.
Tip
Enjoy the chilled noodles with the warm broth for dipping.
To prepare the okra, trim off the stem end and shave away the tough edges around the calyx with a knife. The entire pod, including the calyx, is edible.
