Instructions

Step 1

Cut the unpeeled apple into ½-inch (about 1 cm) cubes. Finely chop the onion.

Step 2

Peel the sweet potato and cut into ½-inch (about 1 cm) thick slices. Steam until easily pierced with a chopstick. While still hot, press the sweet potato through a sieve or strainer.

Step 3

Place the sweet potato from Step 2 in a bowl. Add the egg, bread flour, and salt, and mix until the dough comes together. If the dough is too sticky, add a little more bread flour.

Step 4

Lightly dust a work surface with bread flour (not included in the ingredients). Divide the dough in half and roll each half into a log. Cut each log into ½-inch (about 1 cm) pieces to form the gnocchi.

Step 5

Bring a pot of water to a boil and add salt equal to 1% of the water by weight (not included in the ingredients). Add the gnocchi. Once they float to the surface, cook for about 1 minute.

Step 6

Melt the butter in a frying pan and sauté the apple and onion. Add the heavy cream, water, and Kayanoya Vegetable Dashi. Cook, stirring, until well combined.

Step 7

Drain the cooked gnocchi and add them to the pan. Add the Parmesan cheese and toss to coat. Transfer to serving dishes and finish with freshly ground black pepper.
