Step 1
Cook the somen noodles, rinse under cold running water, and drain well.
Step 2
In a pot, add [A] and bring to a boil. Simmer over medium heat for 2–3 minutes, then add [B].
Step 3
Add the noodles and warm them gently. Remove the noodles and place them in serving bowls.
Step 4
To the same pot, add the cornstarch slurry and stir until slightly thickened. Pour in the beaten eggs and cook until just set. Pour the mixture over the somen and finish with grated ginger.
