Step 1
With skins on, cut a cross at the top of each spring sweet onion, place them on the foil tray, and drizzle with olive oil.
Step 2
Preheat the oven to 390°F (200°C). Place the onion from step 1 and bacon in the oven and roast for about 20–30 minutes, until the onion skins have browned.
Step 3
Serve on plates, peel off the skins, top with the roasted bacon, drizzle with olive oil, and sprinkle basil and garlic salt.
Tip
When roasting juicy spring sweet onions, make a tray out of aluminum foil to catch moisture.
