Instructions

Step 1

Finely chop the hard-boiled eggs and onion. Lightly sprinkle the onion with salt (not included in the ingredients), let sit for about 10 minutes, then rinse with water and drain well.

Step 2

Place [A] in a bowl and mix well.

Step 3

Cut each salmon fillet into 2–3 pieces, arrange them on a tray, and sprinkle with the dashi.

Step 4

Coat the salmon with [B], following the order listed.

Step 5

Deep-fry the salmon in oil heated to 340°F (170°C) until golden on both sides. Transfer to a serving plate and generously top with the sauce from step 2.
