Pumpkin and Ham Croquettes

Instructions

Step 1

Cut the pumpkin into cubes about 1 inch (3 cm) wide. Roughly chop the ham.

Step 2

Place the pumpkin in a heatproof dish, cover with plastic wrap, and microwave on medium (600W) for 5 minutes. Transfer to a bowl and mash.

Step 3

Add the ham and [A] to the mashed pumpkin and mix well. Shape into 6 round patties.

Step 4

Coat each patty in flour, beaten egg, and breadcrumbs, in that order. Pour frying oil into a pan to a depth of about 3/4 inch (2 cm) and heat to 350°F (180°C). Fry until golden brown.
