Pumpkin and Ham Croquettes

With the umami of vegetable dashi, even simple ingredients make delicious croquettes. By microwaving the pumpkin beforehand, you can shorten the frying time.


Ingredients

  • 10.5 oz (300g) pumpkin, peeled and seeded
  • 2 slices ham
  • [A] 1 packet Kayanoya Original Vegetable Stock Powder (remove from the packet)
  • [A] 2 tbsp milk
  • All-purpose flour, as needed
  • Beaten egg, as needed
  • Breadcrumbs, as needed
  • Oil for deep-frying, as needed

Directions

  1. Cut the pumpkin into cubes about 1 inch (3 cm) wide. Roughly chop the ham.
  2. Place the pumpkin in a heatproof dish, cover with plastic wrap, and microwave on medium (600W) for 5 minutes. Transfer to a bowl and mash.
  3. Add the ham and [A] to the mashed pumpkin and mix well. Shape into 6 round patties.
  4. Coat each patty in flour, beaten egg, and breadcrumbs, in that order. Pour frying oil into a pan to a depth of about 3/4 inch (2 cm) and heat to 350°F (180°C). Fry until golden brown.
