Step 1
Preheat the oven to 350°F (180°C). Cut the olives into about 1/2 inch (1 cm) cubes and the red bell pepper into about 1/4 inch (5 mm) cubes.
Step 2
Sift together [A] into a bowl using a fine sieve or sifter. Add [B] and whisk. Once the batter becomes smooth, add [C] and gently fold with a spatula until combined.
Step 3
Pour the batter into muffin tins, filling them about two-thirds full. Bake for 20 minutes (or about 15 minutes if using mini muffin tins).
Step 4
Remove the muffins from the tin and let them cool on a wire rack. Serve with pickles or fresh herbs if desired.
Tip
Plums and walnuts also pair wonderfully in place of the olives and red bell pepper. You can also bake this recipe in a pound cake mold instead of muffin tins.
