Niçoise salad

Ingredients

2-3 servings
  • [A] 1/4 cup olive oil
  • [A] 1/2 packet Kayanoya Original Vegetable Stock Powder (remove from the packet)
  • [B] 1/2 packet Kayanoya Original Vegetable Stock Powder (remove from the packet)
  • [B] 2.5 cup water
  • 1.76 oz cauliflower (small florets)
  • 1.76 oz) broccoli (small florets)
  • 5 snap peas (trimmed)
  • 2 soft-boiled eggs (halved)
  • 1 slice smoked salmon (bite-sized pieces)
  • 2-3 anchovies (thinly sliced)
  • Olives to taste
  • Salt to taste

Directions

  1. In a small pan, add ingredients [A] and heat over low flame, stirring until lightly colored. Let it cool.
  2. In a pot, add ingredients [B] and bring to a boil. Cook each vegetable separately until tender, then drain.
  3. Arrange the cooked vegetables, soft-boiled eggs, and smoked salmon on a plate. Sprinkle with salt, scatter the olives and anchovies, and drizzle with the prepared oil from step 1.
