Step 1

Cut the pork in half crosswise. Prick several holes all over the surface using a fork. Rub in the ingredients  [A]—first the sugar, then the salt, and finally the vegetable stock powder—making sure to coat the meat evenly.

Step 2

Place the pork in a plastic bag and massage well. Let it rest in the refrigerator overnight.

Step 3

Wrap the pork in plastic wrap and microwave at 600W for 4 minutes. Pat dry to remove excess moisture.

Step 4

Line a frying pan with aluminum foil. Sprinkle the tea leaves (removed from the tea bags) and sugar on top. Heat until smoke begins to appear. Reduce to low heat, place a wire rack over the tea mixture, and set the pork on top. Cover with a lid and smoke for 12 minutes. Flip the pork, cover again, and smoke for an additional 8 minutes over low heat.

Tip

Smoking with tea leaves is the key to the flavor.
