Quality Ingredients
Nameko Mushroom
Nameko is a classic Japanese mushroom known for its unique slippery coating. It is commonly used in miso soup, or served with grated daikon and ponzu as nameko oroshi. Larger nameko mushrooms are also excellent when prepared as tempura.
Maitake Mushroom
The word "Mai" in "Maitake" means "to dance" in Japanese. The name is said to come from the joy people felt—so great they would dance—upon finding this mushroom, or from the way its frilly caps resemble a dancing figure. Maitake is rich in umami and can be enjoyed in hot pots, soups, rice dishes, and tempura.
Beech Mushroom
This mushroom is known for its mild, neutral flavor. Rich in umami compounds, they add depth and deliciousness to soups, stews, and simmered dishes.
