Instructions
Step 1
Wash the new potatoes thoroughly with the skin on and cut each into 2–4 pieces.
Step 2
Place the potatoes in a pot and pour in oil until it reaches halfway up the potatoes. Heat over medium-low heat, turning occasionally, and cook slowly until the potatoes are tender and a skewer passes through easily. Drain the oil using a colander.
Step 3
While still hot, transfer the potatoes to a bowl, sprinkle with the vegetable dashi from the packet, and toss to coat. Add the lemon juice and mix well, then serve with baby leaf greens.
