Roasted Flying Fish (Ago)
It is used to make soup stock in Hakata-style ozoni, a traditional New Year’s dish from Kyushu. For Kayanoya's Original Dashi, the freshly caught fish are roasted and then ground whole — bones and all — to extract their full flavor.
Dried Bonito Flakes
We use high-quality arabushi (dried bonito) smoked slowly over hardwood for two weeks. This results in a rich, bold aroma and an exceptionally deep flavor.
Scallop
Formally known as hotategai in Japanese, are a type of bivalve shellfish and are considered one of Japan’s representative seafood delicacies. They are mainly found in the waters off northeastern Japan and Hokkaido. The adductor muscle of the scallop is rich in umami compounds such as glutamic acid and glycine.
