This feature began with a suggestion from one of Kayanoya’s recipe developers. A passionate butter lover herself, she had a realization one day:
“What if you combined dashi and butter? Wouldn’t that make dishes delicious without needing much seasoning?”

So she gave Kayanoya Dashi × butter a try. The result was even more delicious—and easier—than expected, so we just had to share it with you.
Spread it, sauté with it, toss it into dishes — the possibilities are endless. These dashi butter recipes might just revolutionize the way you cook.


Simply Mix and Enjoy: How to Make Dashi Butter


Start with 1 packet of Kayanoya Original Dashi Stock Powder and 50 g (about 3½ tablespoons) of unsalted butter.

Making it couldn't be easier. Simply soften the butter at room temperature, open the dashi packet, and mix the contents into the butter until well combined.

 

 

If you're making extra, try shaping the dashi butter into a log with plastic wrap and keeping it in the freezer. It's a handy way to have it ready whenever you need it—just slice off the amount you'd like to use.

 




How to Use Dashi Butter Packed with Umami

 

A quick taste of the lightly speckled dashi butter reveals its rich, mellow flavor and deep umami. Simply replacing your usual butter with dashi butter can add an extra layer of depth to everyday dishes. It's easy to imagine countless ways to enjoy it.

 

First, let's start with the most classic pairing for butter: bread.

As the dashi butter melts into warm toast, its distinctive aroma gently rises, while its subtle umami and natural sweetness soak into every bite. Even without toppings like cheese, it adds satisfying flavor and richness—making it a wonderful option for busy mornings.

Next, let's see how dashi butter can be used in place of cooking oil in everyday dishes.



Even thinly sliced meat becomes wonderfully flavorful when quickly sautéed in gently melted dashi butter. The butter's umami blends naturally with the meat, creating a rich and satisfying finish. A squeeze of lemon brightens the flavors and brings everything into balance.


For 200 g beef, use 10 g dashi butter.



This simple pasta is satisfying even when you're short on time or don't have many ingredients on hand. Simply toss freshly cooked pasta with a mixture of pasta water and dashi butter.

 

The result is surprisingly flavorful, with a rich, savory depth and just the right balance of seasoning. It's hard to believe that something so simple can deliver such a well-rounded taste.

 

For 80 g pasta, use 15–25 g dashi butter.

Special Dishes with Dashi Butter

For this dish, mashed potatoes enriched with dashi butter are wrapped in pork, then cooked in even more dashi butter. There's also a layer of cheese tucked inside.

With its combination of textures and rich, savory flavor, this dish feels especially satisfying. The buttery richness gives it a touch of indulgence, making it a wonderful choice for a weekend gathering or a meal shared with family and friends. The preparation is fun as well, making it a great recipe to make together with children.

 


Pork-Wrapped Mashed Potatoes 

Ingredients (Makes 6 pieces)

  • 1.1 oz (30 g) dashi butter
  • 3 potatoes (about 1 lb / 450 g total)
  • 3 string cheese sticks, halved
  • 6 thin slices pork belly

 

Instructions

  1. Peel and cut the potatoes into small pieces. Place them in a microwave-safe bowl, cover, and microwave at medium (600W) for about 5 minutes, or until tender.
  2. Add 0.7 oz (20 g) of the dashi butter and mash until smooth.
  3. Place one-sixth of the potato mixture on a sheet of plastic wrap. Wrap it around a piece of halved string cheese and shape into a ball.
  4. Wrap a slice of pork belly around each potato ball. Repeat to make 6 pieces.
  5. Cook in a skillet until the pork is golden brown on all sides. Add the remaining 0.4 oz (10 g) dashi butter and toss to coat before serving.

 




Sweet-and-Savory Desserts with a Delightful Twist

Last but not least, dashi butter found its way into an unexpected dish: Baumkuchen, a layered cake beloved in Japan. Even this classic treat takes on a new character with a touch of dashi butter.

If you've ever discovered a leftover slice in the refrigerator, try reheating it with a little dashi butter. The combination is surprisingly delicious.


 

For 4 slices of Baumkuchen, use 0.4 oz (10 g) dashi butter. Drizzle with syrup, if desired.
