For National Ramen Day, he collaborated with Kayanoya to craft a Truffle Ramen that captures this harmony. By combining Kayanoya’s Vegetable and Mushroom Dashi with layers of shoyu tare, truffle paste, and aromatic oils, he transforms a vegetarian bowl into something deeply luxurious.
Through this collaboration, ramen becomes more than a meal—it becomes an exploration of umami, a bridge between Japanese tradition and the inventive spirit that defines Chef Ivan’s craft.
