Inspired by the subtle richness of Kayanoya’s Dashi Ramen, he sought to reimagine ramen beyond its familiar form. By pairing miso and sesame broth with herbs, mint, grapefruit, and seasonal seafood, he created dishes that awaken the senses and reveal new dimensions of umami.
Through this collaboration, Chef Yamamoto transforms everyday comfort into refined expression—where dashi becomes a language for creativity, and ramen evolves into something gracefully original.
