Chef Yuko Kajino of M Café de Chaya in Los Angeles has built his career around nourishing food that connects body and soul. Known for his plant-forward, macrobiotic approach, he believes that good food should be both wholesome and accessible—something everyone can enjoy, not just in restaurants but at home.
When he discovered Kayanoya’s dashi, Chef Kajino found a kindred spirit in flavor: clean, natural, and deeply comforting. Inspired by its gentle umami, he set out to create recipes that bring the essence of professional cooking into everyday life.
For this collaboration, Chef Kajino crafted three original dishes that celebrate Kayanoya’s versatility: a soothing vegan “pork bone” udon, a hearty vegetable meatball soup, and golden chicken tenders coated in dashi-infused batter. Each dish highlights how dashi can enrich simple home cooking—adding depth, warmth, and a touch of refinement to familiar comfort.
