Umami Dashi Pasta with Mushrooms

A classic dish where the umami of dashi and soy sauce permeates both pasta and mushrooms. Feel free to use mushrooms like shimeji according to your preference.

  1. Cut the mushrooms into bite-sized pieces.
  2. In a deep pot, add the torn packet of dashi packet and water, mix well, and bring to a boil.
  3. Once boiling, add the spaghetti. Ensure it is fully submerged and cook for the time indicated on the package. When 2 minutes of cooking time remain, add the mushrooms and cook until tender.
  4. Add the special sauce and heat until it comes to a boil again, stirring constantly.
  5. Serve the mixture in a deep bowl with the broth, and garnish with roasted seaweed.
