Udon / Soba Broth

Udon and soba are popular Japanese noodle dishes. Here you see it made with Kayanoya dashi soup stock.


2 Servings
  • 2 packets Kayanoya Original Dashi Stock Powder
  • 27 ounces water
  • 1½ tablespoons light soy sauce
  • 1 tablespoon mirin (sweet rice wine)
  • 2 servings udon noodles
  • 2 sheets abura–age (fried tofu)
  • Green onion to taste


  1. Place water and packets of dashi in a saucepan and bring to a boil for 1--2 minutes. Remove dashi packets, then add soy sauce and mirin.
  2. Add noodles, and when the liquid begins to boil again, pour the contents of the pan into a bowl.
  3. Top with roasted abura–age and chopped green onion.
