Delicately stretched for a smooth, springy bite
Distinctive texture

Delicately stretched for a smooth, springy bite

Unlike cut noodles, our hand-stretched udon is finely rounded, creating a unique texture. The twisting process during stretching gives each strand a soft yet resilient chew.
Traditional crafting process

Patience shapes flavor and texture.

The dough is repeatedly rested and stretched, carefully extended to remarkable lengths before being air-dried for a full day. This slow process ensures even texture and lasting quality.

Rich umami in perfect balance

This soup is made with a dashi base of Souda bonito flakes, round herring (urume iwashi) flakes, bonito, and kelp, combined with soy sauce, mirin, and mackerel flakes. The result is an aromatic, deeply flavorful seasoning.
