Hand‐Stretched Udon Noodles

Place 2.36 oz (67g) of noodles into at least 3 cups of boiling water, stirring gently. Boil for 6 to 7 minutes, maintaining a gentle simmer to prevent overflowing.
Drain the noodles in a colander and rinse lightly.

Add 1 1/4 cups (300ml) of water and one packet of the special dashi to a pot. Bring to a boil, then simmer over low heat for 4-5 minutes.
