  1. Peel the lotus root and cut it into 0.4-inch thick diagonal slices. Soak in water, then boil in hot water for about 2 minutes until slightly firm.
  2. While still warm, marinate the lotus root slices in [A] for at least 30 minutes.
  3. Place the marinated lotus root slices vertically. Cut through the center lengthwise, trim the rounded edges on both sides and arrange the two pieces with the cut sides facing up to form an arrow shape.
