Cauliflower Rice Salad

This salad is healthy, tasty, and ready in less than 10 minutes.


2 Servings
  • 1 teaspoon olive oil
  • ¼ cup finely chopped onion
  • 2 tablespoons finely cubed carrot
  • 1 clove garlic, finely chopped
  • 7 ounces grated cauliflower
  • 1 tablespoon butter, cut into chunks
  • 1 packet Kayanoya Original Vegetable Stock Powder (remove from 1 packet)
  • 2 teaspoons lemon juice
  • ¼ cup chopped parsley
  • Black pepper to taste
  • Grated Parmesan cheese (optional)


  1. Heat oil in a medium frying pan. Add onion and carrot, and cook over low heat for 5 minutes. Add garlic and cook 20 seconds. Add grated cauliflower and butter. Stir until butter melts. Pour in Vegetable Stock Powder and stir 3 minutes.
  2. Add lemon juice, parsley, and black pepper to taste. Divide and serve. Top with Parmesan cheese to taste.
