Grilled Flying Fish

It is a familiar soup stock ingredient in Kyushu and is often used in Hakata-style ozoni (New Year’s soup). Freshly caught flying fish are grilled and then finely ground whole, including the bones.

Drop the whole packet into water, bring to a boil on high, then simmer on medium for 3 minutes.

Basic Broth: 1 packet per 2 cups of water.
Perfect for: miso soup, clear soup, chawanmushi (steamed egg custard), udon, soba.

Rich Broth: 2 packets per 2½ cups of water.

Our story began in a quiet village in Kyushu, Japan. Surrounded by fertile land and pristine seas, our founder opened a small soy sauce brewery in Kubara. The goal was simple: to create honest, flavorful seasonings grounded in nature and tradition.

This Western-style dashi concentrates the umami of five vegetables and offers a consommé-like depth of vegetable flavor.

A blend of domestically grown log-cultivated shiitake and maitake mushrooms creates a broth with deep, rich flavor. This dashi is full of fragrant mushroom aroma and is also suitable for vegetarian (shojin) cuisine.

Carefully selected Ma-kombu for its sweetness and Rishiri-kombu for its clear umami create a mellow kelp flavor that complements other ingredients beautifully.

Combining light, clear-flavored tuna flakes with Hongare-katsuobushi, grilled flying fish, Rishiri-kombu, and dried flying fish creates a refined, delicate broth that showcases the umami of tuna.

Balanced and savory, with 53% less sodium than our standard blend—perfect for lighter meals.

Light and gentle, with natural vegetable richness and 67% less sodium than our regular dashi.
