Udon / Soba Broth
Tender early–spring cabbage and onions produce a soothing and satisfying sweet flavor in this simple nutritious miso soup. Kayanoya Special Sardine & Mushroom–Based Dashi Stock Powder imparts wonderful flavor—an indispensable ingredient of great soups.
3 ½ ounces onion (½ of 1 medium–size onion)
2 ounces cabbage (about 2 small leaves)
1 ¾ cups water
1 packet Kayanoya Special Sardine & Mushroom Based Dashi Stock Powder
1 ½ tablespoons mellow sweet miso
Cut onion into thin rings.
Cut cabbage into 1 ½–inch pieces. In a saucepan, add water and packet of Kayanoya Special Sardine & Mushroom-Based Dashi Stock Powder.
Put saucepan on medium heat, bring to simmer, then reduce heat to low for 2 minutes.
Remove packet and press between two spoons to express stock into the pot.
Add onion and cabbage, and cook for 3 minutes.
Turn off heat and add miso, stirring with a whisk.
Divide and serve the miso soup in two small bowls.
