In this dish, grated cauliflower substitutes for rice. It is cooked with onion, garlic, and carrots, and flavored with Kayanoya Original Vegetable Stock Powder. This cauliflower rice salad is healthy, tasty, and ready in 10 just minutes. Top with some shaved Parmesan cheese to make it even more flavorful.
2 Servings
1 teaspoon olive oil
¼ cup finely chopped onion
1 small garlic clove, finely chopped
2 tablespoons finely cubed carrot
7 ounces grated cauliflower top
1 packet Kayanoya Original Vegetable Stock Powder (dashi removed from packet)
1 tablespoon butter, cut into pieces
2 teaspoons lemon juice
¼ cup chopped parsley
Black pepper to taste
Parmesan cheese, grated (optional)
Heat oil in a medium skillet.
Add onion and carrot, and cook over low heat for 5 minutes.
Add garlic and cook 20 seconds.
Add grated cauliflower and butter. Stir until butter melts.
Add Kayanoya Original Vegetable Stock Powder and stir 3 minutes.
Add lemon juice, parsley, and black pepper to taste.
Divide and serve the cauliflower rice salad into two dishes.
Top with Parmesan cheese if you like.
