Udon and soba are popular Japanese noodle dishes. Here you see it made with Kayanoya dashi soup stock.
Ingredients

- 2 packets Kayanoya Original Dashi Stock Powder
- 27 ounces water
- 1½ tablespoons light soy sauce
- 1 tablespoon mirin (sweet rice wine)
- 2 servings udon noodles
- 2 sheets abura–age (fried tofu)
- Green onion to taste
Directions
- Place water and packets of dashi in a saucepan and bring to a boil for 1--2 minutes. Remove dashi packets, then add soy sauce and mirin.
- Add noodles, and when the liquid begins to boil again, pour the contents of the pan into a bowl.
- Top with roasted abura–age and chopped green onion.
