There are two ways to prepare Kayanoya stocks. If your dish requires clear stock, use Method 1. If your dish does not require clear stock, use either Method 1 or Method 2. Both methods result in full-flavor in the stock.
Method 1: The infusion method
One packet per 1 and 3/4 cups water for regular strength dashi or two packets per 2 cups water for strongly flavored dashi.
Place water and Stock Powder unopened packet in a saucepan. Turn on the heat and bring the water to a simmer over medium heat. On simmering cook it for 2 minutes.
Remove and discard the packet. The prepared stock is ready to use.Method 2: The direct powder method: Produces stock with particles of powder

Remove the stock powder from packet(s) and add directly to stir-fried dishes; use as a rub for meat, poultry or seafood, as an addition to pasta and pasta sauces, as a flavoring for rice and grains, as a flavoring for hamburger and more; before baking sprinkle on pizza dough.
a. Prepared stock stays fresh for 2 to 3 days in the refrigerator.
b. After opening the bag containing the packets, remove the air in the bag and close it tightly; store in a cool, dry and dark place. No refrigeration is necessary.
